Vegan vanilla cupcakes
Looking for a delicious vegan treat to share? Surprise for friends, family or colleagues and make these cheery cupcakes yourself. It’s a party to make them and give them away. The Bonvita chocolate crème topping makes this celebration complete.
Ingredients
4 teaspoons ORGRAN No Egg™, Egg Replacer
8 tablespoons water
2 cups non-dairy milk
2/3 cup canola oil
1 cup caster sugar
1 teaspoon vanilla extract
3 cups ORGRAN Self raising Flour
Topping:
3/4 cup non-dairy margarine
1 cup icing sugar
50 grams white Bonvita chocolate
sprinkles (optional)
Method

Preheat the oven to 180°C and line a cupcake tray with cupcake cases.

Whisk together the Orgran No Egg™ Egg Replacer and water. Set aside.

In a large jug, whisk together the non-dairy milk, canola oil, caster sugar and 1 teaspoon of vanilla extract.

Add the Orgran No Egg™ Egg Replacer to the milk mixture and set aside.

Sift together the Orgran All Purpose Plain Flour, baking powder and baking soda

Pour the wet mixture into the dry and whisk until few lumps are left.

Distribute the batter evenly amongst the cupcake cases and bake for 30 mins, or until a skewer comes out clean when inserted into the cupcake.

Set aside and allow to cool completely.

Make the frosting by using an electric mixer to whip the non-dairy margarine until light and fluffy. Add the molten white chocolate and sift in the icing sugar. Mix until light in colour.

Pipe onto the cupcakes and add sprinkles before serving.
